Difficulty: Medium - experience needed
.5 cup flavorful oil (olive or peanut)
2 tbsp brown sugar
1 tbsp paprika
1 tsp garlic powder (or 1tbsp paste)
1 tbsp hot chili powder or cayenne pepper
1 tsp black pepper
3 lbs chicken wings
Combine all ingredients besides wings in a dish or measuring cup. Stir to mix.
Wash wings and place in a ziplock bag, pour marinade over wings. Force air out of top of bag and close to create vacuum, to ensure sauce covers all wings. Mix around and marinate in refrigerator for 1-3 hrs.
Turn grill on and allow surface to heat to medium heat. Remove wings from sauce, and reserve sauce. Pour sauce into metal pan and put on grill, let simmer (small bubbles) while cooking to thicken and use as a baste.
Place wings on, let sit for 6 minutes. Baste side facing up, then turn over. Baste new side facing up after turning over. Let sit for 6 minutes, baste then turn over again. Turn grill to medium-high, Let sit for 2 minutes. Should show grill marks but not be blackened fully.
Remove from grill, coat in sauce before serving, and enjoy
