recipe I got from my sister's mother-in-law; it tasts so healthy and fresh

2 1/2 C lentils (1lb)
8 C water
6 cloves garlic
4 T beef-like broth mix
2 onions, chopped & browned
2 1/2 to 3 C rice (brown rice is quite yummy with this)
2-3 C chopped tomatoes
2-3 C chopped cucumbers
1 1/2 C chopped onion
6-8 C shredded cheese (optional if you want it to be vegan)
1 C fresh lemon juice
1 C olive oil
1/2 t salt


Place lentils, water, garlic and broth mix in large saucepan and bring to boil. Lower heat and simmer until lentils are tender, approximately one hour. Add well-browned onions.

To serve, each person layers rice, lentils, chesse and veggies onto plate as desired. Use plenty of the lemon juice/oil sauce (it is trully what makes the recipe so delicious!)
