Serves: 6 to 10
2 - 16oz pkgs frozen yellow and white sweet corn (thawed)
1/4 cup sugar
1 1/4 t salt
2 cups Half and Half
4 large eggs
1/2 stick (1/4 cup) butter
3 T flour
1 red (sweet) pepper- minced
1 bunch scallions sliced thinly (include green tops)
Optional...seeds from 1/2 vanilla bean (or ¼ teaspoon pure vanilla) & parmesan cheese for topping.
Melt butter and lightly saute (or sweat with lid on) on med heat, peppers and onions...cool.
Process one bag of thawed corn in food processor to a medium meal. In a large bowl, place the processed corn, the bag of whole thawed corn, sugar, salt and the sauteed (cooled) vegetables. Mix well. Mix (in a separate bowl) the eggs, half and half, vanilla seeds and flour....add to corn mixture and pour into a buttered 9 X 13 cake pan and top with parmesan. Bake for 45 minutes in the center of oven at 350 degrees. Doesn't serve as many as you might thinkâ€¦ and is also good room temperature or cold.
