Difficulty: Easy - for beginners
1 oz pasta uncooked
1/6 tsp table salt
2 cup fat free skim milk
1/4 cup all purpose glour
cup low fat shredded cheese
1/8 tsp hot perpper sauce (optional)
Cook pasta in boiling water according to package directions, drain and return to pot.
In a large saucepan, whisk together milk, flour, salt until well blended. Bring to boil over med high heat, whisking frequently, reduce heat to low and simmer, stirring often, until thickened about 2 minutes. Remove pan from heat and whisk in cheese and hot sauce. Add sauce to pasta, toss to mix and coat pasta. Yields about 1 cup per serving.
