150g natural yoghurt
1 garlic clove, crushed
15ml (1tbsp) curry powder (pick your strength)
900g (2lb) beef, cubed
450g can coconut milk
300ml (1/2pt) beef stock
450g can chopped tomatoes
Handful of desiccated coconut (optional)
Combine the yoghurt, garlic and curry powder
Stir in beef, giving a good bash with a wooden spoon to help tenderise
Leave to marinade for 1 hour
Place beef and marinade in large pot with coconut milk, stock and tomatoes
Bring to the boil, cover and simmer for 2 hours or until meat is tender
Stir occasionally.
Tasty Coconut Beef Curry - DONE!!
