Lamb Kebab Marinade

A tasty and tangy marinade for grilled lamb kebabs.

1 1/2 cups plain yogurt
1/3 cup fresh lemon juice
1/3 cup lime juice
1/3 cup oil
1 medium onion, grated
2 tbsps. rosemary (preferably fresh)
1 tbsp. black pepper
1/2 tsp. cumin
2 tsps. oregano
2 tbsp. majoram (preferably fresh)
4 tbsps. minced garlic
2 onions thinly sliced
4-5 lbs. lamb meat (preferably lamb shoulder)


Mix all ingredients well (except lamb and SLICED onions). Place four pounds of cubed lamb and sliced onions in a plastic freezer bag; pour marinade over meat. Seal bag securely, letting out most of the air. Mix meat and marinade in bag, making sure meat is well coated. Recheck bag seal, and lay bag in refrigerator evenly and flatly. Marinate for 24, hours or longer. Skew, and grill. Grill or indoor sauté sliced onions for an accompaniment to lamb. Eat lamb with sides, as sandwich/pita, or with fresh greens in a salad.
