Summer burritos

1 pkg any size tortillas
1 can black beans -RINSE WELL!! in a colendar
(or 1/2 bag prepared black beans-)
2 cups of fully prepared brown rice-cooled
1 cup diced tomatoes
1 cup sliced red or white onions
chopped cilantro
1 cup bell (any color) peppers
any additional peppers to taste
shredded cheese or tofu(optional)
Taco sacue
sour cream or any vegan derivitive


Take one tortilla
layer all ingredience in middle and sprinke sauce on top. Add sour cream and cheese if desired. I don't heat them us as i like them almsot like a summe taco salad. Serve with chips and Guacamole
