Sift flour, bp and salt. Combine egg, milk and melted butter. Pour into flour mixture and combine until just smooth. Mix in sweetcorn. Fry like crumpets - the batter should have the same dropping consistency.
Serve warm with slices of smoked salmon, avocado, a dollop of creme fraiche and a wedge of lemon; and a watercress and rocket salad on the side, drizzled with balsamic glaze.
Alternatively, with rashers of crispy bacon and maple syrup.
