* 1 lb. firm tofu, patted dry and mashed
* 1/8 tsp. turmeric
* 1 tsp. onion powder
* 1/2 tsp. salt
* 1 cup of your favourite vegetables such as broccoli, fresh mushrooms, onions, or tomatoes
3 minutes. Add the remaining ingredients, stir well, and cook for 5 to 8 minutes, until the vegetables are cooked and the tofu is heated through.
Heat 1/4 cup of vegetable broth in a skillet over medium-high heat. Add the celery, onion, bell pepper, and carrot. Cook until softened. Add the remaining vegetable broth and kale.
Cover the pan and cook until the kale is wilted.
Add the crumbled tofu. Cook until firm and lightly browned. Add the salt, pepper, and basil.
