Couscous Pilaf

Couscous with some bits added - adapted from Cooking Light.

1 box couscous
Water or chicken broth
1/3 cup dried cherries or other tart dried fruit
1/4 cup toasted, slivered almonds
3 Tbsp chopped fresh Italian parsley
1 Tbsp extra-virgin olive oil
.5 tsp grated lemon rind
.25 tsp each salt and pepper


Prepare couscous according to package directions, using either water or chicken broth in amount called for. Add all other ingredients to cousous, mix and serve. Easy!

I like to use orange peel sometimes, and sometimes I put a little fresh mint in with the parsley (2 Tbsp parsley, 1 Tbsp mint). I also sometimes use walnut oil instead of olive oil.
