Zucchini Bread

Easy recipe since our zucchini is in the garden now and ready to eat!

Preparation time:
Cooking time: 1 hour

Difficulty: Easy - for beginners


2 cups of shreded zucchini
2 1/2 cups self rising flour
3 tsp. vanilla
2 cups sugar
3 eggs
3 tsp. cinnamon
1 tsp. nutmeg
1 cup walnuts or pecans


Mix all ingredients and put in 2 bread pans sprayed down with non stick cooking spray. Bake at 325 for 1 hour.

* This bread is good just plain but if you'd like you can put a cream cheese icing on top!
