Quick Easy Pesto-Feta Omelet

olive oil
1/3 cup Egg Beaters
1 Tbsp whole wheat flour
1-2 Tbsp feta
2-3 Tbsp pesto


1. Put a small amount of olive oil into a small skillet and place over low flame
2. Add flour to Egg Beaters and shake well, pour into skillet
3. Sprinkle feta and spoon pesto onto 1/2 of omelet
4. Allow bottom of omelet to set- the top will be mostly set as well along the edges
5. Fold empty half of omelet over onto the half with the filling, press down slightly to 'seal'
6. Cook for a few minutes more on each side to finish setting the inside
7. Serve with bread and butter, fruit, etc
