Clam Chowder

This is a basic but good clam chowder recipe that i pieced together from a bunch of others.

Ingredients

1 Quart half and half
3 X 6 1/2 ounce can of whole or chopped clams
1/4 lb of salt pork sliced into strips
1/2 cup of butter
1/ cup of flour
1/8 tsp dry rubbed thyme
1 Bay Leaf
Salt and Pepper to taste
about 2 cups of Water
2 Russet Baking potatoes, diced
3 stalks of celery, diced
1/4 bell pepper, skinned and diced
1/4 cup of clam juice
1 medium onion diced

Method

Drain and chop clams into chunks, save liquid. Render salt pork in 1 tablespoon of vegetable oil. Set rendered bits aside. Add and lightly brown onions, celery and bell pepper. Melt butter and add flour making a blonde rue. When the flour has had a chance to cook out a bit, add the clams and reserved juice. Add remaining ingredients ingredients except potatoes and water. Boil water in separate pot. When the soup begins to simmer, add potatoes and cook just until fork tender. Add boiling water until you have the desired consistency.
