400g new potatoes, halved if larger
2 tbsp olive oil (or more if preferred)
2 large handfuls cherry tomatoes
1 tbsp balsamic vinegar
2 salmon fillets
handful basil leaves
Pre-heat oven to 220C/fan 200C/gas 7.
Wash the potatoes but there's no need to peel them.
Put the potatoes and 1 tbsp of olive oil into an ovenproof dish, making sure the potatoes are completely coated with oil.
Roast the potatoes for 30-35 mins until they are starting to brown.
Remove dish from the oven and add the cherry tomatoes and vinegar.
Nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked through.
Scatter the basil leaves over the top and serve straight from the dish.
