Blueberry Muffins

1 1/2 cups all-purpose flour
1 cup fresh blueberries
1 egg white
1 tbsp vegetable oil
1/2 cup milk
2 tbsp margarine, melted
2 tsp baking powder
1/4 tsp salt
1/2 cup white sugar


Preheat oven to 400 F.
Mix 1/4 cup of the flour with the blueberries. Set aside. Beat egg white and 1 tbsp oil lightly in a bowl. Stir in milk and melted margarine or oil.
In a separate bowl, mix together remaining flour, baking powder, salt, and sugar. Sift dry ingredient mixture over egg white mixture. Stir just long enough to moisten flour. Do not overmix! Fold in blueberries. Fill each cup 2/3 full with batter. Bake in preheated oven 20-25 min. or until golden brown.
