Summer Salad

Healthy, simple, delicious, refreshing (in the hot summer temps especially) salad!

Ingredients

1-box penne pasta (wheat free / gluten free... I use brown rice pasta)
2-bell peppers (diced)
4-roma tomato (diced)
1-broccoli tree (about 2c chopped)
1-minced garlic clove
2-tbsp fresh chopped parsley
2-tbsp fresh chopped basil
1/2c sunflower seeds
6-sundried tomato pieces chopped
3-tbsp good EVOO (extra virgin olive oil)

Method

-- Cook pasta (boil entire box about 7-9 min... as recommended on package)
-- Saute diced bell peppers and sundried tomato in 1-tbsp EVOO on med-low heat for a few minutes (until bell peppers turn bright in color - I use green)
-- Add sunflower seeds, garlic, parsley, basil to saute mixture (while still on med-low heat) stir continuously for a few minutes allowing flavors to combine
-- Drain penne pasta, coat in 2-tbsp EVOO just to keep it from sticking together and put in serving bowl, add saute mixture and combine well
-- Add chopped broccoli and diced roma tomato and stir into pasta mixture well

NOTE - this saves well in fridge and satisfies hunger anytime as well as compliments any summertime meal. Give it a try.
