this is one of my favorite childhood recipes! Dad like to keep his cereal simple... but you can mix and match these ingredients however you like. You can even cook in the oven... or microwave (oven obviously preferred...)

1/2 C Oil (Canola, Coconut, etc)
1/2 C honey
1 tbl vanilla

4 C oats
1 1/2 C Coconut
1 C nuts
(you can sub in other things too, ex. -1/2 c cocount and + 1/2 dried fruit)


preheat oven to 325

in a bowl, mix together all dry ingredients

in a 9x13 Pyrex pan (or similar)
heat oil (measure first) and honey till bubbling ( a few minutes)

remove pan from oven and stir in Vanilla.

Once mixed well, add in dry ingredients, mix well.

return to the oven.

Cook for approx 15 minutes, removing the pan from the oven even 5 minutes and stirring the mixture very well.

Once complete, let your granola cool on wax paper, or simply in the pan (you will have to break up the cooked chunks later though)


note: to microwave
heat oil and honey about 1 minute until bubbling
follow same directions above... cook for 9 minutes, stopping to sir well every 3.
