Difficulty: Easy - for beginners
1 1/2 pound ground chuck
1/2 pound ground lamb
2 teaspoon salt
1 ½ teaspoon freshly ground black pepper
2 clove garlic, finely minced or grated with micro plane
Combine all the ingredients in a large mixing bowl and mix well with two forks. Refrigerate for at least 30 minutes or up to 2 hours. Make into patties and grill to medium or freeze for cooking later.
A garnish of chopped, fresh parsley adds color and freshness. Serve the Cevapcici sliced across patty with pita bread and cucumber-yogurt sauce. Raw sweet onions (Vidalia) would be a nice addition.
Can also mimic traditional Gyros meat with the addition of oregano, cumin, marjoram, rosemary, and thyme (1 teaspoon each).
