Spicy Sausage with Sauerkraut

Originally a polish dish modified slightly to accommodate me. The roots remain the same with a bit of a bite added for your pleasure. Based on a recipe by Aaron McCargo Jr.

Difficulty: Easy - for beginners
Serves: 4


1 1/2 lbs of your favorite spicy kielbasa or similar sausage (andouille, bratwurst, etc)
2 T Butter
2 T Sugar
1 Onion
3 C Sauerkraut, drained
3 T Fresh chopped parsley


Preheat a pan to medium to medium-high heat. Preheat oven to 400 degrees.

Cut sausage into 3 inch length and butterfly. Put in large skillet and brown both sides (4 to 5 minutes). Transfer sausage to oven and cook for another 5 to 6 minutes.

I large skillet, add butter and sugar. Allow sugar to cook to a golden brown. Add onions and cook until caramelized. Stir in Sauerkraut and cook for 5 minutes until onions and sauerkraut are wilted and colored.

Remove sausage from oven and cut into one inch pieces. Add to skillet. Toss together and allow to cook for one minute. garnish with parsley and eat.
