8 plum tomatoes, sliced 1/2" thick.
a dozen mushrooms diced very fine
1C parmesan or romano cheese
(also, a little asiago's really good, if you have that)
1T olive oil
italian seasonings (thyme, oregano, rosemary, basil)
1/4" butter (from a stick, duh)
heart of an artichoke, steamed and diced.
1/4 C red onion diced vry fine
wash the mushrooms.
sautee 2/3 of the mushrooms with the onion in olive oil and seasonings.
slice the tomatoes & array in a baking dish.
When most of the liquid is gone from the 'shrooms,
...add breadcrumbs, artichoke & most of the parmesan, stir.
Layer the mixture on the tomatoes, making a "pie"
Another thin layer of parmesan on that.
Last, the rest of the mushrooms (diced, but still raw) on top.
Bake 375 for 40 min.
