Mom's Stuffed Peppers

Fairly easy one pot meal that takes about 30 mins. to prep and cooks for about two hours, if you let the sauce cook in the oven with the peppers already in the sauce.

1 med. onion, chopped
1 clove garlice, minced
2 cans tomato puree
1 15-oz tomato paste
1 can tomato soup
1 cup water
salt and pepper to season
fresh or dried oregano
1-1/4 lbs. grass fed beef or bison
3/4 c bread crumbs
1/2 c uncooked rice
1 tsp. salt
1/4 lb. ground pork
1 beaten egg
1 med. chopped onion


Saute onion and garlic till golden. Add tomato puree, paste, soup, water, and seasonings. Bring to boiling, simmer 1.5 hours.

Meanwhile combine pork, bread crumbs, egg, rice, onions, and salt. Cook peppers 5 minutes and stuff with meat mixture. Place in casserole and bake at 350 for 1.5 hours, basting three or four times.
