15oz. can of black beans, drained (but not rinsed!)
1/2 cup salsa
3 tbsp. uncooked bulgar wheat
Leaf lettuce, shredded
Cheddar cheese, shredded
Low fat sour cream (I use plain yogurt)
Whole grain flour tortillas
1. In a saucepan, simmer the beans, salsa, and bulgar wheat for 5-7 minutes. Stir occasionally.
2. Remove from heat, cover, and let stand for 5 minutes.
3. Wrap the tortillas in aluminum foil and heat them in the oven.
4. Spoon the black bean mix onto centre of tortilla , garnish with tomato, lettuce, cheese, and sour cream/yogurt (avocado really adds to it too). Wrap and eat!
