eggy beef roll ups

1/2 cup kikkoman teriyaki marinade
300g beef fillet
2tbsp coriander leaves
6 eggs beaten
salt and freshly ground pepper
2 nori sheets
1/2 cucumber finely sliced


1 Preheat oven to 200 c gas mark 6.Rub the kikkoman teriyaki marinade into the beef.Heat a pan over a high heat and fry the beef on all sides.

2 Transfer to an ovenproof dish and roast for 20 mins.Leave to cool.Cut into thin slices.

3 Mix together the coriander,eggs and seasoning.Heat a small non-stick pan over a medium heat.Spoon a little of the egg mixture into the pan and cook for 1min.Flip over and cook other side.Repeat with remaining mixture.

4 Cut the nori sheets into strips about 2cm wide.Place the strips on a surface,then lay an omelette on top of each.

5 Layer the slices of beef in the middle and top with cucumber.Roll up from the bottom.Serve cold with extra kikkoman teriyaki sauce to dip.
