4 pears: peeled, cored, and halved.
1.5 cups Malbec wine
0.5 cups water
0.75 cup sugar
2.5 tablespoons lime juice
0.5 teaspoon lime zest
2 teaspoons vanilla
1 teaspoon cinnamon
Bring all ingredients, except pears to a boil. Reduce heat to light simmer. Add pears and poach for 10 minutes. Turn pears and poached until tender and easily pierced with knife--about another 10 minutes. Remove pears and prepare to serve.
1) Sprinkle with sugar, and brulee with blowtorch or under broiler.
2) Boiling poaching liquid and reduce by 2/3. Drizzle sauce over poached pears.
