Broccoli Cheese Soup

A lighter brothy version

4 T butter
1/2 cup onions, finely chopped
1/4 cup mushrooms, chopped
6 cups chicken broth
1 carrot, finely chopped
1/4 tsp salt
1/4 tsp pepper
4 ounces Velveeta, cubed
1 head fresh broccoli
1/2 cup rice


In large saucepan, saute onion and mushrooms in butter until tender.
Add chicken broth, salt and pepper, and carrot. Bring to a boil.
Chop broccoli. Add rice and broccoli to broth. Return to a boil, turn down to a simmer and cook uncovered for 15 to 20 minutes. Turn off heat and add cheese. Stir until melted.
