Green Chili Infused Vodka

I love to make some of this in late August/Early September when the Hatch Green Chilis are widely available. This is great for adding heat and flavor from the chili to everything from soups to vegetables, and yes...even a bloody mary.

Preparation time: 10 minutes
Cooking time: 2 weeks

Difficulty: Easy - for beginners


2 cups vodka
3 Hatch Green Chiles


Peel and seed the chiles and then cut into strips. Pour vodka into a clean mason jar and add chiles. Seal tightly and place in a cool dark location for two weeks. Give the jar a gentle shake every couple of days.

Optionally, roast the chiles over fire, or under broiler until the skin chars and bubbles. Then, place in a bowl and cover tightly to allow peppers to steam. Afterwards, remove the peels and see. Give a light dice and use to infuse vodka.

Also, for more heat, add the seeds to the vodka, too.
