1 cup of regular jasmine rice
1 lime, zested
1 cup of canned coconut milk (find it in the thai section of your grocery store)
1 cup of water
salt to taste
Heat the cocunut milk and the water to boiling in a medium saucepan over high heat.
Reduce heat to low and add the rice and salt.
Cover and simmer for 15 min or until all the liquid is absorbed.
Add lime zest and fluff with a fork.
