Peach Salsa

A nice, fruity salsa that is great to serve a top grilled pork chops or as a standalone with some good tortilla chips.

3 peaches
1 thai chile, minced
2 cloves garlic, minced
2/3 cup red onion, chopped
1 1/2 lime, juiced
1 teaspoon lime zest
1 dried chipotle
1 teaspoon minced mint
1/2 teaspoon minced oregano
salt and pepper to taste


Blanche peaches in boiling water for two minutes or until skins start to loosen. Then, transfer to bowl of ice water. Peel and dice peaches.

Reconstitute chipotle pepper in hot water. When rehydrated, seed and mince.

Mix all ingredients in bowl adding equal amount of thai chile and chipotle to reach desired level of heat.

Chill for 30 minutes.
