Tuna and Bean Salad

This recipe has a lot of bang for the buck. It is inexpensive, low cal, low fat, high protein, high fiber, and delicious!

1 cup string beans cooked (fresh, canned or frozen are fine)
1 - 6 oz can Albacore Tuna
1/2 cup cooked Canellini or other White Bean (Canned or soaked and cooked dried beans)
1/2 cup chopped Red Onion
1/4 cup chopped Celery
1 cup halved Cherry Tomatoes
1/4 cup chopped Carrots
1/2 cup diced cucumber
1/4 cup diced bell pepper (any color)
2 Tablespoons chopped fresh Cilantro
2 Tablespoons Red Wine Vinegar
1/2 Tablespoon Olive Oil
3 cups (or one package) Baby Arugula
Salt and Pepper to taste


Mix all ingredients except Arugula in a bowl. Divide Arugula on two plates and top with mixture.
