BBQ Baby Carrots in a Bourbon Brown Butter Sauce

1 lb. peeled baby carrots
2 tablespoons olive oil
1 teaspoon Salt
1 teaspoon Pepper
1 clove garlic, minced
1/4 cup brown sugar
1/4 cup butter
1/3 cup bourbon


toss carrots in oil. Then, add salt and pepper. Add carrots to heat safe casserole dish or baking pan and place on BBQ/smoker for 1.5 to 2.5 hours depending on temperature. Cook carrots uncovered until soft and easily pierced with a knife.

Create sauce by adding butter to a shallow pan on medium heat. Let let simmer until butter is melted, caramalizes and is accompanied by a nutty aroma. Be careful to not let the butter burn. Add garlic and brown sugar. Stir until sugar is dissolved and sauce heats through. Remove pan from burner and add bourbon. Return pan to burner and stir constantly until sauce is slightly thickened. Add carrots and toss to coat.

Serve hot garnished with sprigs of thyme.
