Another Mediterranean dish. Normally served cold with hot pita bread. This is great for parties and cookouts.

2 cups cracked wheat
2 cups very hot water
1 cucumber chopped
2 small tomatoes chopped
1 bunch of green onions sliced
1/2 cup fresh chopped mint
2 cups of fresh chopped parsley
1 clove of garlic (optional)

Dressing: 1/2 cup of fresh lemon juice
3/4 cup of extra virgin olive oil
1 tsp pepper
2 tsp salt


Soak cracked whet in hot water until water is absorbed (about 30 minutes)
Drain excess water if any
Combine salad ingredients, including wheat, in medium bowl
Mix the dressing ingredients together and stir in salad mixture
Serve chilled or at room temp
