Jaffa cake muffins with apricot and hot chocolate sauce

100ml/3½fl oz dark chocolate sauce
100ml/3½fl oz apricot sauce
2 Jaffa Cake muffins or similar
2 scoops vanilla ice cream
fresh mint
25g/loz shelled pistachio nuts, chopped


1. Firstly, warm the sauces gently in two separate pans.
2. Remove the paper cases from the muffins. Place on a plate and microwave on full power for 20-30 seconds, or until the chocolate starts to melt on top.
3. Place a spoonful of the apricot sauce in the centre of the plate and the chocolate sauce around the edge. Position the muffin in the centre, add a scoop of ice cream, a sprig of mint and a scattering of pistachio nuts.
