Monsta Chicken

Delicious chicken dish I got from my dad. He was a fireman and one of the guys there would make this meal all the time and they loved it. My 3 year old daughter at the time started calling it Monsta chicken because you use muenster cheese.

1.5 pounds of boneless, skinless chicken breast
1 large pack of sliced mushrooms (or 2 if you love them like us!)
1 pound of munster cheese (provolone, or both)
1 cup chicken broth or cream of mushroom soup

Breading is optional
***I made this again the other night, I tweaked it a little: I flattened the chicken and layered munster cheese on it, diced the mushrooms and added wild rice and rolled the chicken up. I drizzled olive oil over it as well, sea salt and garlic salt. Poured the chicken broth over it and more cheese and mushrooms! It was incredible! The wild rice tasted so good with the mushrooms!


Place chicken in large baking pan
Add mushrooms over top
Add munster cheese slices on top of mushrooms
Pour chicken broth over chicken so pan has about 1/4 inch of broth on bottom
Cover top
Cook at 350 degrees for 1.5 hours
