Vegan Chickpea Burgers

2 cups cooked chickpeas (if from a can drain and rinse; if cooked from dry make sure they're cooked to "can" consistency)
1 can black beans (drain and rinse)
4 Tbsp olive oil
2 Tbsp soy sauce
2 Tbsp worcestershire sauce
1 cup vege broth or water
1 tsp paprika
1 tsp oregano
1/2 sage
1/2 tsp salt (or to taste)
1 cup bread crumbs
1 vital wheat gluten


Mash or chop beans until there is no whole bean left (but don't puree!). Mix with oil, sauces, and water. Add spices and stir. Add bread crumbs and wheat gluten and mix. At this point you'll have to finish mxing with your hands. Mix until a "dough" is formed then knead gently for 3-5 minutes (this forms the gluten). Try not to be too aggressive with it, but towards the end of kneading start shaping it into a log, ~15-20 inches long. Slice log sideways into 1/4" - 1/2" slices. Press and shape patties by hand to desired size (should be just under 1/2" thick. Gently pound with a meat tenderizer is a nice effect. Pan fry patties with ~1 tsp of oil on each side until brown (~3-5 minutes per side depending on heat).
