Vegan Waffles

Modified from the original recipe. I eat these almost every morning with blueberries and maple syrup.

Preparation time: ~15 mins
Cooking time: ~1 hour total

Difficulty: Easy - for beginners
Serves: 10-15 waffles

Dietary guidance: v v 


3 cups flour (I use 2 cups all purpose white and 1 cup wheat)
1 Tbsp baking powder
1/2 tsp salt
2 Tbsp sugar
2 Tbsp ground flax seed
1/2 tsp cinnamon
3/4 cup oil (any less and the waffles may stick)
2-1/2 to 3 cups soymilk


Mix dry ingredients well. Add oil and soymilk and stir to incorporate (a whisk works best). Let batter sit to thicken while waffle iron heats up. Waffle quality depends on how thick the batter is. Thick batter willl make dense cake-like waffles. Thin batter makes bubbly, light waffles. Check batter after sitting and add water or milk to adjust to your liking. Spray waffle iron with non-stick spray and cook per iron instructions. Freezes very well.
