Make your favorite Quiche even better!

Substitute the cream/milk in your favorite quiche recipe with cream of something soup. Delicious!

Preparation time: less than 10 minutes
Cooking time: 45 min

Difficulty: Easy - for beginners
Serves: 6

Ingredients

The quiche recipe I use originated from my dear friend Ellie Rogers...

1 deep dish frozen pie crust -- I'm going to try using grated hash brown potatoes as a replacement next time
1 10.5 oz frozen pkg spinach (or other chopped veggie, sausage or combo)
4 eggs
Just under one cup of cream of something soup, milk, cream, rice milk, or soy milk
1+ cups medium cheddar cheese, grated
If not using cream of something soup, add salt, dill, and butter to taste for spinach

Method

Defrost pie shell at room temp. Meanwhile, cook spinach and add salt, dill and butter to taste (unless using cream of something soup). DRAIN WELL, but should be moist (I even gently press a paper towel to it). Put spinach in pie shell. Mix eggs and soup/ milk. Pour on spinach. Top with dense layer of grated cheddar cheese. Cook at 350 for 30-45 minutes until center is cooked. Cool for 10-15 minutes.
