Lemon Snowbars

Recipe makes 16 lemon snowbars!

Preparation time: 20 minutes
Cooking time: 40 minutes

Difficulty: Easy - for beginners


1-1/3 plus 2 tablespoons cups flour, divided
1 cup sugar, divided
1/2 cup butter, softened
2 eggs
1/4 teaspoon baking powder
Juice and zest from 1 large lemon
Powdered sugar


Preheat oven to 350 degrees F.
Lightly grease 8-inch square pan.
Completely combine 1-1/3 cups flour, 1/4 cup sugar and butter.
Press down into prepared pan.
Bake for 15-20 minutes or until edges are brown.
Combine remaining ingredients, except powdered sugar, until well mixed. Pour over crust and continue baking for 18 minutes or until set.
Remove from oven and sprinkle with powdered sugar.
Cool completely before cutting into 16 bars.
