Carol's Belgian Waffles

This recipe is compliments of my good friend Carol, who happens to be one of the best cooks I know. I like mine with strawberries and whipped cream rather than butter and syrup.

Difficulty: Easy - for beginners


2 cups flour
3 tsp baking powder
1/2 tsp salt
3 eggs, separated
1 3/4 cups milk
4 tbs butter, melted
3 tbs sugar


Preheat waffle iron. Spray with non-stick cooking spray one time, and blot off excess spray,

Combine flour, baking powder, and salt.

In a separate bowl, beat egg yolks well and all milk and butter.

Combine flour mixture and yolk mixture and beat until smooth.

In a separate bowl, beat egg whites until stiff, but not dry. Slowly add sugar, beating constantly.

Gently mix a third of the beaten egg whites into the batter, then carefully fold the remaining egg whites in.

Pour about a half cup of the batter into preheated waffle iron. Cook until golden.
