Firey Fish Tacos with Wasabi Guacamole, Salsa Cruda, and Mock Mexican tartar sauce

no awards when entered in the Dr. GONZO's Xtreme Charcoal Grilling Challenge (Round IV). I would like to think the reason for not winning was poor execution, not poor recipe.

10-20 flour tortillas

2 lbs white grillable fish


10-20 flour tortillas


¼ cup Fresh chopped cilantro

¼ cup lime juice

¼ cup tequilla

2 tbsp Dr Gonzo’s garlic mash

2 tsp Dr. Gonzo’s Peppermash

Salsa Cruda

Six diced and drained plum tomatoes

2tbs Dr. Gonzo’s Garlic mash

¼ cup fresh chopped cilantro

½ medium chopped Vidalia onion

2 tbsp Dr. Gonzo’s Jalepenomash

Salt and black pepper to taste

¼ cup lime juice

Wasabi Guacamole

4 ripe pitted avocados (you can substitute one packet of Trader Joes "Guac in a box", Wholly Guacamole, or Calvado Guacamole; all of these come in a box of two 4 oz packets of pre-made, very mildly seasoned guacamole)

1/4 cup of Salsa Cruda (see recipe above)

1/2 tsp/or to taste dry powdered wasabi

Mexican mock tartar sauce

1/3 cup plain yogurt(its health food if you use non-fat)

1/3 cup sour cream

1/3 cup mayonnaise

1/3 jar Dr. Gonzo's Kamehamehamash

1/4 cup fresh lime juice

2 tsp Dr Gonzos garlic mash

1/4 or 1/2 head shredded cabbage or lettuce

fresh lime wedges

shredded sharp cheddar cheese


mix all marinade ingredients in a gallon size ziplock bag

cut fish into manageable sized pieces for grilling (the more surface area, the more effective the marinade will be)

place fish in marinade 1/2 - 1 hour before grilling

mix tartar sauce ingredients in a bowl

mix salsa ingredients in a bowl

mash avacado's into a lumpy paste and mix wasabi guacamole ingredients in a bowl

grill the fish over medium heat

wrap tortillas in foil and heat on the grill over low heat

serve fish on tortillas squeeze lime over the fish

add salsa, tartar sauce, guacamole, cabbage and cheddar cheese as desired


great served with grilled fruit
