Homemade Salsa

My salsa never turns out the same. I use fresh veggies and proportion them as my mood dictates!

12 Roma tomatoes (less juice than other tomatoes)
1/2 to 3/4 of a medium onion
1 to 2 jalapeno peppers depending on how hot you want it, or more if you dare!
cilantro, I like LOTS of cilantro
1 clove garlic
salt to taste
1 tablespoon sugar, if desired
1 to 2 teaspoons cumin
chili powder, to taste if desired
1 to 2 chipotle peppers! minced fine
I sometimes add a splash or two of either balsamic vinegar or tequilla or lime juice


Chop all veggies to small dice. Mince garlic and cilantro. Stir all together with seasonings and allow to rest and chill in the fridge for several hours or overnight before serving with chips or on your entree. Like I said, I am moody with my salsa, so I may add other ingredients I may have on hand like green chilies - or whatever. I may even puree part of the salsa or add some tomato sauce to add body to the salsa. All in all, the basic ingredients are listed above, but salsa is probably one of the recipes a person can be most creative with. I really love adding minced chipotle peppers. I may even try adding some black beans and corn kernels. Have fun!
