4-6 cups of peaches, pared & cut into small chunks
1 pint fresh blueberries
1/2 brown sugar (I use Splenda blend)
2 T flour
1 t cinnamon
1 t salt
1/4 to 1/2 c white sugar or Splenda, depending on how sweet the fruit is
1 c Bisquick
3 T Splenda or sugar
2 T butter, softened
1/2 c milk
Preheat oven to 350. Spray a small casserole or 9x9 pan with butter-flavored Pam.
Combine the fruit in a large bowl. In a separate bowl combine the first set of dry ingredients; flour, brown sugar, white sugar, cinnamon, and salt. Mix together well. Sprinkle over the fruit and coat the fruit with the dry ingredients.
In another bowl add the Bisquick, sugar, butter, egg, and milk. Blend with a whisk or a fork until combined. The consistency should be similar to pancake batter, maybe slightly thicker. Add more Bisquick or milk to get the right consistency.
Put the fruit into the casserole, then pour the batter over the top making a thin layer. Some of the batter will drip down into the fruit miix, that's okay.
Bake for about 45 minutes to an hour when the topping is cooked through and nicely browned on top. Start checking at the 30 minute mark.
Cool and serve with vanilla ice cream or whipped cream. Double the recipe for a 9x13 pan.
