Browned Oatmeal

If you eat oatmeal just because it's good for you - try this. It's a serious improvement - especially in the texture.

1/4 t. butter
handfull of almonds with their skins on (8-12)
small pinch of salt
dash of cinnamon
1 packet of vanilla sugar
3 heaping soup spoons of oatmeal
1 T. raisins (optional)

milk & sugar


Roughly chop almonds. Put a small sauce pan on a low burner. Add butter & almonds. Toss. Add oatmeal, cinnamon & salt. Stir for a minute. Add vanilla sugar (if you don't have any, add 1 t. of sugar now & a few drops of vanilla extract with the water). Stir until the oatmeal significantly changes color. Stir from the bottom so it doesn't burn. Add water until desired thickness. Boil 10-20 secs. (be careful when you add the water, it steams like crazy!) Serve with milk & sugar - raisins if you like.

Sometimes I add other spices like nutmeg, cloves or ginger.
