White Clam Sauce

A variation on the basic 5 ingredient white clam sauce my grandfather and my dad used to make. I add Dr. Gonzo's Garlicmash to the mix, and use whole wheat flour instead of white flour - it gives it a richer flavor, and it's slightly less bad for you :)

Cooking time: 10 minutes

3T butter
3T Whole Wheat flour
2T garlic, finely sliced or minced
1/2 T Dr. Gonzo's Garlicmash
2 cans chopped clams
Oregano to taste


1. Melt butter in a medium saucepan, then add flour to form a roux (stir together thoroughly into a thick paste over low heat).
2. Add garlic, cook for one minute, then add clams (with juice) and oregano. cook over low heat until sauce thickens, stirring constantly. serve with linguine, fettuccine, or angel hair. top with Parmesan cheese.
