Cilantro Lentil Soup

There are two types of people in this world; those that like cilantro and those that don't. This is wonderful if you like cilantro

Preparation time: 2 hours
Cooking time: 1 hour

Difficulty: Easy - for beginners
Serves: 10


1 1/2cups of orange lentils
7-8 cups water
4 vegetarian bouillon cubes
1 medium potato, peeled and cut into 1/2 inch dices
2 bunches of swiss chard, thick stems removed, cut into 1/2 inch pieces
1 medium onion
3 Tbsp olive oil
1 bunch cilantro chopped fine
3 cloves of garlic, minced
1/2 tsp pepper
1/2 tsp ground cumin
3 Tbsp lemon juice
salt to tast


In 5 quart pot, combine lentils, 7 cups water and bouillon cubes. Cover and bring to simmer. Add potato. Add swiss chard and simmer until everything is tender (about 40 minutes). In frying pan, saute olive oil and onion until soft and golden, about 15 minutes. Add cilantro and garlic and saute a few more minutes. Add the onion cilantro mixture to soup during the last 5 minutes of cooking. Stir in pepper, cumin and lemon juice. Add additional cup of water if needed. Add salt if needed.
