Greek Couscous Salad

Even if you're not a big zucchini fan, you'll enjoy this easy-to-make pasta salad. It's flavorful and light.

1 box regular quick-cooking couscous
2 t. freshly ground black pepper
1/2 cup lemon juice
1/3 cup olive oil
2 T. Cavendar's Greek Seasoning
1 pint cherry or grape tomatoes, quartered
1 medium zucchini, halved and very thinly sliced
1 cup carrots, chopped fine
1 cup fresh basil, chopped fine
1 cup feta, crumbled


Cook couscous according to package directions, adding black pepper to pasta as it cooks. Transfer cooked couscous to a large bowl and add lemon juice, olive oil and Greek seasoning. Toss to completely coat pasta. Add tomatoes, zucchini, basil, and carrots and mix until well blended. Chill for 3-4 hours, or longer if you'd like. Before serving, toss in feta cheese.
