1 1/4 pounds spinach
2 Tbsp vegetable oil
1 large onion, very thinly sliced
1/2 tsp ground cumin
1/2 tsp turmeric
salt and cayenne pepper to taste
1 cup water
1 tsp garam masala
8 ounces firm tofu, cut into 1/2 inch cubes
1. Remove the tough stems from the spinach and wash the leaves carefully in several changes of water.
2. Heat the oil in a large, heavy pan and add the onion. Cook over medium heat, stirring occasionally, until the onion is lightly browned and beginning to carmelize. Add the spinach and stir until all of the spinach has wilted. Add the cumin, turmeric and salt and cayenne pepper to taste. Mix well. Add the water and cook over medium low heat for 30 minutes. Add the garam masala and stir. Carefully fold the tofu into the spinach mixture so as not to break the cubes. Cook over medium low heat until the tofu is heated and very little moisture remains, about 10 minutes.
