Spicy Beef and Rice

Difficulty: Easy - for beginners


1 cup brown rice
1 pound extra lean ground beef
1 1/2 tablespoon of olive oil
1 medium onion, chopped
1 large tomato, chopped
2 chopped green onions
2 medium jalapeno peppers, minced
1 teaspoon crushed garlic
Salt and pepper to taste


Prepare rice according to package and set aside. In a medium skillet, brown beef and drain. Add Olive Oil and mix onion, jalapeno, pepper, garlic and tomato. Cook for about 15 minutes or so slowing mixing all ingredients. Add salt and pepper to taste. Serve over bed of rice.
