Red Beans and Rice

A recipe I have enjoyed since I was a kid.

2 or 3 cans red kidney beans (New Orleans Van Camps)
1 ham slice
1 cup finely chopped onions
1/2 cup chopped celery
1/2 cup chopped green pepper
1/4 tsp basil
1/4 tsp thyme
1/4 tsp garlic salt
black pepper


cut all fat off ham slice and cut into small pieces. put in dutch oven or deep skillet with small amount of bacon grease or oil. cook for a short time - ham is precooked. drain excess juice - leave some to cook onions, celery and green pepper in. add other seasonings. add 2-3 cans red beans. simmer. serve over cooked rice.
