Crockpot Mediterranean Chicken

Sauteed chicken simmered in a sauce of tomatoes, olives, white wine, garlic, and herbs

4 - 6 skinless, boneless chicken breast halves
2 teaspoons olive oil
1/2 cup white wine
3 cloves garlic, minced
1/2 cup diced onion
3 cups tomatoes, chopped OR 1 can Hunt's fire-roasted, diced tomatoes
2 teaspoons chopped fresh thyme or 1 tsp. dried
1 tablespoon chopped fresh basil or 1 Tbsp. dried
1/2 cup kalamata olives
1 can navy or other white beans, drained, optional
1/2 tsp. ground cayanned pepper, optional
salt and pepper to taste


Place chicken breasts in the bottom of crockpot. Mix remaining ingredients and pour over the chicken. Cook on LOW for 6 - 8 hours breaking up chicken 4-5 hours into cooking time if desired. Serve over pasta or rice and top with feta or parmesan cheese if desired.
