-olive oil, approx 1-2 Tbsp.
-1 onion (white or yellow), cut in half and sliced
-black pepper to taste
-1-2 Tbsp curry powder (adjust to taste)
-4 small zucchini, cut lengthwise and sliced into 1" pieces
-3-4 c. chicken stock (use vegetable stock if vegetarian/vegan) (use more or less stock according to the quantity and/or thickness of soup that you desire)
Heat oil in the bottom of a large pot. Add onion and cook on medium-high heat, stirring frequently. Add pepper and curry powder, and keep cooking until onions are almost tender.
Add the zucchini. Cook and stir until tender.
Add the stock, turn down the heat, cover the pot, and simmer for about 20 min.
Blend in a food processor until almost pureed.
